Canape with hummus and pomegranate
Ingredients:
- 30 salty crackers;
- ⅔ glasses of hummus;
- ⅓ glasses of pomegranate seeds;
- 3 tablespoons shredded feta cheese
- fresh mint leaves for decoration.
Preparation
- Spread some hummus over the crackers. If desired, cookies can be replaced with tartlets.
- Sprinkle with pomegranate seeds, feta cheese and chopped mint leaves on top.
- Enjoy.
Fast Spanakopita
Ingredients:
- 280g frozen spinach (thawed)
- 1 tablespoon olive oil
- 1/2 onion, cut into thin rings;
- 2 green onions, thinly sliced;
- 2 cloves of garlic, minced;
- ½ teaspoon dried oregano
- ½ teaspoon hot pepper (optional);
- salt and freshly ground black pepper to taste;
- ¼ cups of freshly chopped dill
- 1 teaspoon lemon zest
- 1 cup shredded feta cheese
- a pinch of nutmeg (optional);
- 10 sheets of filo dough;
- ¾ cup butter, melted.
Preparation
- You will have to tinker a little with this appetizer, but it will turn out to be a lot and very tasty! Preheat oven to 175 degrees and line two medium baking sheets with parchment paper. Using a clean kitchen towel, squeeze any excess moisture out of the defrosted spinach. Transfer to a large bowl.
- Heat oil in a large skillet over medium-high heat. Add onions and green onions and sauté for 5 minutes. Then add the garlic, oregano and red hot peppers, and season with salt and pepper. Transfer the mixture to a bowl of spinach.
- Add dill, lemon zest, feta and nutmeg to a bowl of spinach and stir until smooth. Taste and add more salt and black pepper if necessary.
- Remove the filo dough from the refrigerator and cover with a slightly damp kitchen towel. Take one sheet, place it on a clean surface, brush it with melted butter, then cover with another sheet. Also lubricate it with oil. Then cut them into six long strips of equal size.
- Place a tablespoon of the filling in the corner closest to you on one strip of filo and roll into a roll. Prepare as many rolls as there is enough filling.
- Place the rolls on a baking sheet, seam side down and brush with butter. Bake until golden brown and crisp, 20 to 23 minutes. Let cool slightly before serving.
Goat cheese sauce with herbs
Ingredients:
- 1 cup shredded goat cheese, room temperature
- ½ cup ricotta cheese (can be substituted with cottage cheese);
- 2 finely chopped onions;
- ¼ cup finely chopped fresh parsley
- 2 teaspoons lemon zest
- 2 tablespoons lemon juice
- salt and freshly ground black pepper to taste;
- olive oil;
- grissini or breadsticks to serve.
Preparation
- Grind the goat cheese and ricotta (curd) in a food processor or blender until smooth, about 1 to 2 minutes. Transfer to a bowl and add green onions, parsley, zest and lemon juice. Season with salt and pepper. Mix everything again.
- Sprinkle with parsley on top and drizzle with olive oil. Serve with grissini or breadsticks.
Sweet and salty feta cheese cubes
Ingredients:
- Chees Feta;
- honey;
- chopped pistachios.
Preparation
- Cut the cheese into small cubes and string on skewers or toothpicks. Dip feta cubes in honey and let the excess drain.
- Sprinkle immediately with finely chopped pistachios.
- Can be refrigerated before serving.
